I was recently approached by Essential Cuisine to review their delicious stock (that tastes homemade) and use it to create a unique recipe. I was quite excited to do a food blog post but there was just one problem and that’s the fact that I can’t actually cook very well. Luckily my talented fiancé Gareth is a whiz in the kitchen.
Essential Cuisine have four different flavours of stock: Chicken, Vegetable, Lamb and Beef. We decided to use the Chicken and Vegetable stock for our recipe, as we thought a combination of these two flavours would be perfect for our chicken and rice dish with a side salad.
I’ve popped our yummy recipe below followed by a few pics of me in the kitchen and of course, the final product: Sweet Chilli and ginger sticky chicken
What you’ll need for the chicken is:
6-8 boneless chicken thighs
1 table spoon of crushed ginger (or fresh)
1 table spoon of crushed garlic (or fresh)
Sweet chilli sauce
Basmati rice (as much as you need) and of course….
Essential Cuisine Chicken (diluted in 250ml of hot water) and Essential Cuisine Vegetable stock on its own.
Cooking time was around 35 minutes and the method is below:
Brown the chicken thighs in a bit of olive oil on a high heat (skin down to make it crispy mmmm); once the chicken is browned, reduce the heat slightly and add the chicken stock (diluted in 250ml hot water), garlic and ginger to the pan; let it boil for around 20mins or so until the chicken is cooked through and the stock reduces; once your chicken is cooked and the stock reduced, pour out the excess stock/water and coat the chicken in the pan with sweet chilli sauce and roll the thighs in sesame seeds, then cook for a further 10-15 mins. Once your rice is ready (cooked using which ever method suits you best, we use a rice cooker), stir in half a teaspoon of undiluted vegetable stock for flavour – trust me, it’s delicious. Annnnd you’re ready to sit back and enjoy!
Any salad would compliment this delicious dish, but if you’re stuck for ideas, we threw this into ours: green/red/yellow peppers (slightly roasted), cherry tomatoes, baby lettuce and juicy strawberries. Add a bit of lime juice for a bit of zing!
